untempered
Untempered means a white 'bloom' pattern will be on the cacao. Tempering cacao means raising and lower the temperature so that the crystal formulation inside the chocolate is altered. We don't do this for the 100% cacao block, as it doesn't need it. When it's untempered it melts quicker - so it's perfect for hot cacao and baking
